Dear Friends of Wilbur:

Each day, for the past 56 weeks, we have had the welcome opportunity to have an open, transparent dialogue with Wilbur’s Owner and Caretaker, Dr. Richard Miller, and his adoring wife, Mrs. Jolee Miller. No matter, what the cause, concern or celebration, the door is always open.

Wilbur’s door is also always open. It invited us in.

For 56 weeks, it has challenged us personally and professionally each day. It has drawn us closer together.

Recently we read:

For 56 weeks, we have said “thanks” – the expression of our gratitude –  when, in actuality, we should have been saying “we are grateful.”

Meet Jason
Wilbur Hot Springs is honored to introduce Chef Jason Ryczek. Having grown up in a little seaside town on the Central Coast of California, Jason is both familiar and fond of all the bounty that local seafood has to offer. Jason is a veteran to the hospitality and restaurant industries, having held various front and back-of-house positions since junior high. After years of watching the professionalism, humor, and humility of the chefs he worked for, Jason decided to devote his career to the kitchen. Food was the basis of a craft, understanding and interpreting it was the foundation of a restaurant’s menu, and service was the show.

His culinary training began in Southern California in Jason Marcus’ San Diego restaurant Red Pearl Kitchen, soon moving to Los Angeles to continue developing his skills at various brasseries and steakhouses, such as One Sunset, Boa Steakhouse, and Artisan House. After arriving in San Francisco in 2013, Jason spent three years in the kitchen of Farallon’s sister restaurant Waterbar, working with fresh, sustainable seafood and developing a culinary style emphasizing the simplicity of natural flavors with bold accents. In January 2016, Jason became the executive chef of Farallon. As executive chef, Jason oversees the development and execution of Farallon’s seasonally rotating menu.

Since Farallon’s opening in 1997, the restaurant has garnered national acclaim as a top dining establishment in the heart of San Francisco’s Union Square. Specializing in Coastal Cuisine, we are thrilled that Jason and his culinary brigade will bring a taste of Farallon to Wilbur Hot Springs this June.

Chef Jason is pulling out all stops to showcase culinary highlights perfect for kicking off the summer. You may look forward to a Surf & Turf feast on Friday night. Farallon’s French Pastry Chef who will join us here at Wilbur as well, will be showcasing breakfast pastries and mouth-watering desserts.

Saturday Brunch will be a Seuss flashback with ‘Green Eggs and Ham” and mediteranean dips and spreads, salads and sandwiches.

"Summer, Summer, Summertime" celebrations continue on for Saturday evenings spread- for those who enjoy pairing their food with a glass of wine, Beaver Creek Vineyards- a bio-dynamic wine producer in Lake County will offer you tastes of Sauvignon Blanc and Petite Syrah- to accompany a huge feast of grilled Dungeness Crab with all the fun summer trimmings to go along with it, other seafood and gorgeous organic veggies and salads. Vegetarian options and other dietary needs will be accommodated; please make mention of your needs when making a reservation.

Rev. Julia Harrell is a spiritual minister whose greatest joy is in offering spiritual guidance that will help others on their path of awakening. She will be offering a mini workshop on Tuesday evening, May 2nd along with clairvoyant readings and healing sessions on May 3rd & 4th. A multi-media approach to watercolor landscape painting using crayons, pencils, markers and watercolor. This workshop is not about careful and precise use of the materials, it is about quick expression and learning how to take chances and experiment. We start with a few warm up exercises and learn basic techniques of paint application and control. The purpose of the workshop is about letting go, creating freely, trusting instincts, being fearless. All artist levels welcome, no experience necessary. Nominal fee of $25 per person, per session

Spending time under a dark country sky, far from the distracting noise and lights of the city, can help us to reconnect with ourselves, with the Earth as a planet in space, with the natural cycles of time, and with the larger cosmos. During Memorial Day weekend, Friday May 26 through Monday May 29, Wilbur's own amateur astronomer, Anthony Barreiro, will be our guide to the springtime skies. Throughout the weekend, we'll braid together three complementary ways of knowing the sky: practical knowledge of how things look and move in the sky, traditional images and stories of the sky handed down from our ancestors, and current scientific understanding of stars, planets, and galaxies.
